My dad was a voracious eater. We picked on him that he liked coffee with his sugar. He would “diet” and drink a diet slim fast and add sugar to it. He was a character.
A couple of weeks back I was talking with some co-workers and the subject of what we were going to eat for lunch came up and one of the gals said she was going to have a egg sandwich. My dad LOVED fried egg sandwiches. When I was old enough to cook I would make triple decker sandwiches for my brothers and my dad. When asked what type of sandwich my wanted to eat, he would always ask for a fried egg sandwich. Lots of melted butter on a very low heat with a lightly scrambled egg. He would eat two of them every time.
I hadn’t made one of the sandwiches in decades. So that day after my call with my co-workers, I made a fried egg sandwich just the way my dad would have liked it. I lifted my sandwich in his honor and said, “this one is for you dad”. Silly I know, but it warmed my heart to think he would have liked that sandwich I made.
